Saam I Aam

Located in a clandestine room behind an unmarked door at the rear of The Bazaar in the SLS Hotel, Saam offers one of the best and most exciting dining experiences in the city. Here, super-star chef José Andrés has crafted a tasting menu of approximately 22 small plates of whimsy and gastronomical delight, almost all of which do not appear on the menu at The Bazaar. With so many courses, the meal takes around 3 1/2 hours to complete. Service is top-notch; among the best I’ve ever experienced. Of course Saam is not inexpensive. The cost is $120 per person plus tax, tip, optional wine pairing ($100) and optional shaved truffles ($35-$50 per course). But as with The French Laundry, this is not just a meal. It’s an evening of entertainment; a special and unique experience.

Chef Andrés, who trained at the legendary El Bulli in Barcelona, is incredibly creative and utilizes molecular gastronomy and other playful techniques to surprise and wow his diners. There are scallops masquerading as carrots, spherified mozzerella balls which instantly liquify in your mouth, a Vietnamese Bahn Mi sandwich which has been elevated both literally and figuratively, and a Spanish street food favorite that has been turned inside-out. It’s all really delicious too. One of the high points of the meal is “Dragon’s Breath Popcorn,” a puffed corn cake that is immersed in liquid nitrogen at your table, causing smoke to come out of your nose and mouth when you eat it. The desserts are excellent also, especially the frozen Apricot Timbale with Amaretto, and there is a gift of chocolates to take home.

Saam is located in the SLS Hotel at 465 S. La Cienega, Los Aneles (Mid-City near Beverly Hills and West Hollywood). If you enjoy Consuming LA, please subscribe, like me on Facebook and/or follow me on Twitter at the top right of this page. And please forward to your friends!

Magnificent Mediterranean

I love small plates and I love sharing. This is no doubt due to my desire to always hedge my bets, diversify my portfolio and not miss out on trying anything interesting-sounding or potentially good. My wife, on the other hand, does not like to share; she prefers to order only one thing and eat it all by herself. It’s for this reason that I haven’t taken her with me to Mezze, a restaurant whose name is the Arabic term for a selection of small plates which are meant to be shared. The cuisine at Mezze can best be described as Contemporary Mediterranean or Middle Eastern Fusion, somewhat upscale and incredibly delicious. The decor at Mezze, which occupies the old Sona space on La Cienega, perfectly matches the food; warm and exotic yet modern and chic. It’s a great place to go for a special occasion or just a nice evening out with friends.

The best way to start your meal at Mezze is with a libation. Specialty cocktails include the Abdullah Palmer (gin, cachaca, black lime and Moroccan mint tea) and the George Dickel Pickle (whiskey, mustard seed, lemon, celery and serrano pepper), and there is a good wine list including wines from Israel, Lebanon and Morocco. While you’re enjoying your drink, you can select which flatbreads to order as appetizers. I recommend the Zatar with Olive Oil and the Marquez Sausage with Tomato Jam and Aleppo Pepper (it’s like a Middle Eastern pizza). In terms of small (and large) plates, Braised Moroccan Chicken Wings with Picholine Olives and Golden Raisins are excellent, as is the Lamb Shoulder with Smoked Oats and Dukkah Spice (pictured above). The Brussels Sprouts with Soft Boiled Egg and Soujouk are an absolute must-have. For dessert, make sure to get the Lebne Cheesecake with Persimmons, Ginger & Hazelnuts.

Mezze is located at 401 N. La Cienega Blvd., Los Angeles (Mid-City).

UPDATE: Mezze is now closed, but hopefully just temporarily. The massive construction next door has hurt their business significantly. They say they are looking to relocate soon.

A Sweet Thanksgiving

For most of us, the Thanksgiving meal is all about succulent roast turkey, savory herbed stuffing, buttery mashed potatoes, and tart and sweet cranberry relish. However, a great Thanksgiving meal should be like a great concert at the Hollywood Bowl; you need to end it with a fireworks finale! So whether you’re hosting a Thanksgiving dinner or you’re an invited guest thinking about what to bring, here are some really cool and unusual Thanksgiving desserts which are sure to impress.

Gourmet Thanksgiving Pies

1. Gourmet Thanksgiving Pies. These are probably the most beautiful, upscale and delicious Thanksgiving pies I have ever seen or tasted. Super talented French pastry chef Romain Drocourt of The Little Door and Little Next Door has created elevated versions of pecan and pumpkin pies with French flare. These elegant and sophisticated pies make the ones at Marie Calendar’s and House of Pies look like their poor Hillbilly cousins. The Pecan Pie is made with toasted and caramelized pecans, a thin gingerbread spice tart shell and lemon mascarpone and maple syrup cream on top and comes with a side of Earl Grey sauce. The Pumpkin Pie is made with organic pumpkin, praline custard and yummy homemade cinnamon marshmallows. You can purchase them both (make sure to order in advance) at the bakery at Little Next Door, along with a really cool table centerpiece: a large French baguette bread with sesame seeds in the shape of a Turkey (pictured above). I like to call it a “Vegetarian Turkey.” Little Next Door is located at 8142 W. 3rd Street, Los Angeles (in Mid-City near West Hollywood)

Thanksgiving Cupcake Fourpack

2. Thanksgiving Cupcakes. Starting this Monday, for only three days, Yummy Cupakes will bring back their Thanksgiving themed cupcakes. These Turkey Day-inspired flavors are Marshmallow Yam (yam cupcake filled with marshmallow fluff and frosted with a brown sugar buttercream), Lime Jell-O (lime cupcake filled with lime Jell-O and topped with lime whipped cream frosting), Pumpkin Pie (pumpkin cake topped with a pumpkin cream cheese frosting) and Turkey Gravy Cranberry (a turkey gravy cupcake seasoned with savory Thanksgiving gravy, filled with a fresh cranberry relish and topped with a cranberry cream cheese frosting). I haven’t tried the Turkey Gravy ones but you can bet I will be first in line try one on Monday. Yummy Cupcakes has three locations: 2918 W. Magnolia Blvd in Burbank, 313 Wilshire Blvd in Santa Monica, and 220 26th Street, Santa Monica (near Brentwood).

Candied Yam Ice Cream

3. Thanksgiving Ice Cream. One of my favorite ice cream shops in LA, Sweet Rose Creamery, is now selling several fun and delicious Thanksgiving flavors including Candied Yam, Cranberry Orange Sorbet, Spiced Pumpkin, Apple Cider and Quince with Manchego. I’ve tried them all and my favorites are Candied Yam (which has pieces of marshmallow in it) and Spiced Pumpkin. They also have three special holiday ice cream pies which look like traditional pumpkin, pecan and apple pies (make sure to order these in advance). The Pecan Ice Cream Pie has Salted Caramel Ice Cream and butter pecans in a chocolate cookie crust. The Pumpkin Ice Cream Pie has Spiced Pumpkin Ice Cream with whipped milk and pepitas and is dusted with cinnamon sugar in a ginger cookie crust. The Apple Pie Ice Cream Pie has Apple Pie Ice Cream topped with caramel sauce and is dusted with cinnamon sugar in a graham cracker crust. Sweet Rose Creamery is located in the Brentwood Country Mart at 225 26th Street in Santa Monica (near Brentwood).

Happy Thanksgiving!

Mexican Gourmet Goodness

Several high-end Mexican restaurants have opened in LA in the past couple years, most notably Red O, which I found disappointing. I think a lot of these restaurants have cool decor, great mixed drinks, beautiful plates, but taste-wise the food is nothing spectacular. This is not the case with Rosa Mexicano, which just opened its second location on Sunset in West Hollywood (the other location is Downtown in LA Live). Everything about Rosa Mexicano is muy excellente, especially the food! When I first heard about Rosa Mexicano, I was skeptical about a Mexican restaurant that is part of small chain originating in New York City, but I was quickly and completely won over.

The restaurant is quite beautiful with vibrant colored lights and a waterfall and it has a fun, sexy atmosphere. The signature drink here is a Frozen Pomegranate Margarita, which is really tasty and packs a punch. But my favorite beverage is their awesome White Wine Sangria. Rosa Mexicano makes some of the best guacamole I have ever eaten and they make it fresh for you tableside. They also serve two amazing spicy salsas, a Oaxacan pasilla salsa and a tomatillo and habanero salsa, so between each of these and the guacamole, it’s pretty much a dilemma as to what to dip your tortilla chip into; I usually alternate between the three.

In terms of appetizers, I loved the Pacific Yellowtail (Hamachi) Tartare (diced yellowtail, watermelon, cucumber and jicama served with a tomato-habanero sauce and a ball of jalapeno ice on top) and the Pork Belly and Sea Scallop Tacos (braised heritage pork belly and seared diver scallop served on warm corn tortillas with a citrus-habanero salsa). For entrees, there is a wide variety of traditional Mexican dishes which have been refined and taken to a whole new level. My favorite is the Carne Asada Tacos (grilled skirt steak marinated in juajillo and pasilla chiles, garlic, cumin and black pepper and served on a shallow bed of melted Chihuahua cheese with fresh corn tortillas and sides of red bean chorizo chili and creamy corn esquites). Other main courses include ancho chiles stuffed with slow-cooked marinated pork, a chicken tortilla pie, perfectly seasoned and grilled shrimp brochettes and a variety of gourmet enchiladas. There are also several great vegetarian options as well as a gluten-free menu. You will want to save room for dessert, especially the scrumptious tres leches cake topped with blackberry-hibiscus glaze and toasted meringue, and the decadent Banana Chocolate Chip Cake filled with peanut butter mousse and topped with dark chocolate sauce and cinnamon swirl ice cream.

Rosa Mexicano is located at 8570 West Sunset Boulevard, West Hollywood and 800 W. Olympic Blvd, Los Angeles (Downtown; in LA Live).

Indelible Ink

The opening of Ink in West Hollywood two weeks ago has been one of the most eagerly anticipated restaurant openings in the country. Ink is the creation of Michael Voltaggio, the heavily tatted and touted bad-ass winner of season six of Top Chef and former chef at The Dining Room in the venerable Langham Huntington Hotel in Pasadena. In August, Voltaggio opened a small sandwich shop called ink.sack a few doors down from Ink (read my review here), which I have fallen in love with and frequented over the past several weeks, so I was more excited than ever to try Ink. Against all odds, I was able to score an 8pm reservation for a party of four last Saturday night.

The atmosphere of the restaurant is one of frenetic excitement. The decor is modern and the restaurant is dimly lit. There is an “omakase” bar on one side which accommodates eight people per night. There is a boisterous cocktail bar which serves creative and delicious libations and is presided over by talented mixologist Devon Espinosa, who served as chief wingman to molecular gastronomist Marcel Vigneron on the short-lived Syfy TV series Marcel’s Quatum Kitchen. And most notably, there is an open kitchen were you can see the chefs hard at work, including Voltaggio who works on the line with his staff.

The menu at Ink consists entirely of small plates; American tapas which Voltaggio describes as “modern Los Angeles cuisine” inspired by the myriad of cultures that make up LA. On the waiter’s recommendation, we ordered the whole menu — literally! Over the course of two and half hours, we were treated to a procession of beautiful, creative, cerebral and perfectly executed dishes. The flavor profiles were complex and interesting, although I thought some combinations worked better than others. My favorites were the Beef Tartare (with Horseradish, Hearts of Palm and Sea Bean Chimchurri), the Halibut Cheeks (with Red Pepper Dashi, Shishito Peppers and Kelp Pasta), the Berkshire Pork Tenderloin (with Charcoal Crust, Macaroni & Cheese and Leeks) and the “Spaghetti” (which was actually giant squid prepared to look like spaghetti, accompanied by squash, hazelnut-ink pesto and piment d’Espilette). Each of these were incredible! My least favorite dishes were the Dungeness Crab (with Smoked Mayo and Bok Choy “Kimchi”) and the Quail (with Banana Polenta, Beet Juice and Sorrel Salad), although I thought they were two of the most beautiful dishes. The desserts were equally creative, fun and delicious, with the stand-out being a dessert of Apple, Creme Caramel, Burnt Wood Sabayon and Walnuts, which was unlike anything I have ever had before.

Ink is located at 8360 Melrose Ave., Los Angeles (in West Hollywood).
