I Came, Orsa, I Conquered.

There’s a state of consciousness that I refer to as “aesthetic bliss.” It’s when one or more of your senses is completely enraptured as a result of a highbrow pursuit. It’s the feeling you get while listening to Beethoven’s Ninth Symphony at the Walt Disney Concert Hall, taking in the Bolshoi Ballet’s Swan Lake at the Dorothy Chandler Pavilion, or viewing a Kandinsky exhibit at LACMA. The food version of this is Orsa & Winston, the dining experience from local superstar chef Josef Centeno.

Centeno is the creative talent behind awesome hipster eateries Bäco Mercat and Bar Ama, as well as the former chef of Lazy Ox Canteen. With Orsa & Winston, Centeno now has a more sophisticated environment to show off his mad skills. The menu has you select from either a five or eight course seasonal tasting menu (or with a 72 hour advance reservation, you can truly indulge and opt for the “Super-Omakase” of more than 20 courses). All come with optional wine pairings, as well as optional supplemental dishes. Each tasting menu is a procession of beautiful, delectable and perfectly executed small plates to experience and savor.

Needless to say, such aesthetic bliss is not inexpensive. But for a special occasion or when you just want to treat yourself to an evening of exceptional food and wine, Orsa & Winston is worth the splurge.

Angels Flight is an LA curiosity located in the heart of downtown. Built in 1901, it is known as “The Shortest Railway in the World,” and for 50¢, takes you up 298 feet to the top of Bunker Hill. A couple blocks away, on 4th Street, is another elevation of sorts. Bar Amá is a new restaurant from Chef Josef Centeno (Bäco Mercat and Lazy Ox Canteen) that serves elevated Tex-Mex fare.

Often described as bastardized Mexican cuisine from this side of the Border, Tex Mex is comfort food that is usually cheap and best enjoyed with a cold cerveza. For Chef Centeno, it’s the food that he grew up with and, at Bar Amá, he refines several Tex Mex classics and puts a new spin on others. There is of course Queso, a gloppy liquid cheese dip that is a Tex Mex staple and delectable Puffy Tacos filled with yummy Carne Guisada. My favorite dishes are an amazing Pork Belly Chicharron with Poblano Cream and Lime, and a decadent dessert of Leche Quemada (Burnt Milk) Pudding with Graham Cracker, Fennel Pollen, Peanut and Almond. Other menu items, such as the Rancho Gordo “Borracho” Beans with Beer, Cilantro and Bacon and the Albondigas with Corn & Sweet Potato Cake, Tomatillo and Baked Egg, sounded better than they tasted.

Not surprisingly, the elevated cuisine at Bar Amá is pricier than the grub at most Tex Mex eateries. However, you’re dining in a nicer than normal space; a very cool industrial chic room with lots of reclaimed wood and southwest tiles. Also worth mentioning is the impressive bar stocked with an extensive array of high end tequillas and mezcals. For extra fun, you can follow your dinner with a ride on Angels Flight and experience a bit of LA history.

I cannot stop thinking about Bäco Marcat, an awesome new Downtown restaurant from Josef Centeno, the super-talented chef of Lazy Ox Canteen. I think it’s the quintessential LA restaurant. Like Los Angeles, it’s not formal; it’s cool and laid back with a rustic industrial chic interior that feels very 2012. The cuisine defies classification and is incredibly original. Like the population here, the food is an eclectic mix of cultures including Asian, Latin American, Middle Eastern and Moroccan. Most of all, Bäco Marcat is fun! They make and bottle their own “Bäco Pop,” an orange ginger juniper soda and they have an amazing bar serving super cool and inventive cocktails with names like the “Gin-Pop!” and the “Black Mint Spritz.”

There are so many great things on the menu, it’s hard to know where to start. First of all, there are the “Bäcos,” inventive and scrumptious sandwiches prepared with the chef’s signature flat bread. I highly recommend “The Original” Bäco with pork belly, beef carnitas and salbitxada (a savory sauce similar to romesco), as well as “The Touron” Bäco with oxtail hash, pickles, crispy potatoes and cheddar. I also recommend the Bäzole Soup, which is kind of cross between a Japanese Ramen and a Mexican Pazole, made with house-made noodles, pork-chile broth, pork and beef carnitas and a fried egg. There are also delicious “Cocas,” crispy flat breads with a variety of toppings including one with house-made Merquez sausage, harissa and goat cheese. Bäco Mercat has several yummy specialty salads and vegetable dishes including my favorite dish on the whole menu, Kabocha Squash with brown butter. I’ve had pureed squash a million times before, but never like this; it is outrageously good! If you have room for dessert (or even if you don’t have room for dessert!), order the Pistachio Semifreddo Dark with pine nuts, caramel and sea salt. This sweet and salty dessert completely blew me away. If I lived or worked Downtown, I would probably eat here everyday.
